This recipe will serve 4-6 people.

Ingredients

• 1 Small onion, diced
• 1/2 lb. Ham, julienned
• 1 T Olive oil
• 3 c. Fresh corn
• 1/4 c. Fresh basil
• 1 tsp. Crushed red peppers
• Kosher salt and black pepper to taste

The Method

• Shuck corn and cut kernels from the cob.
• Saute onion in a frying pan on medium heat.
• Add ham and cook until heated through.
• Throw in the corn, crushed red peppers and salt and pepper to taste.
• Remove from heat and add the basil.

Serve it warm or cold. It's the perfect accompaniment for grilled chicken.
