Ingredients

• 2 pounds dried black beans
• 2 sweet peeled and chopped white onions
• 1 Poblano cut into 4 pieces
• 3 T ground cumin
• 2 oz fresh chopped coriander
• Sea Salt and Black pepper to taste
• 6 ripe tomatoes- remove seeds and dice
• 1 large diced red onion
• 4 oz X virgin Olive oil

Method

• The key to cooking black beans is to soak them in a large quantity of cold water for at least 2 hours.
• Remove the soaking water from the beans and place the beans in a large pot.
• Add Poblano ,white chopped onions , cumin and fresh chopped coriander.
• Add at least 4 times the amount of water compared to the volume of beans.
• Bring mixture to a boil and then simmer until the beans are tender.
• Stir occasionally…..
• Discard 80% of the liquid from the pot.
• In a separate pan caramelize the chopped red onion, then add the chopped tomatoes and cook for another 3 minutes.
• Add this mixture to the beans.
• Season with salt and pepper and add 4 oz extra virgin olive oil to the beans and let the mixture sit for about an hour. Some of the bean starch will begin to break down and thicken your masterpiece!
• Serve in a large bowl with your other sides and main courses…..
